

Got some beautiful (Angus Choice, nothing fancy) ribeyes dry brining for 2 days. Grilled them over Jealous Devil until 125 degrees internal. They were large steaks so me and my girlfriend split one instead of eating them both.
As we ate one, we left the other uncovered. After we finished I went to put the second steak in a Ziploc for lunch tomorrow when I discovered all these little white clumps that look like bunches of rice, wasn't there when I pulled the steak off as they were bright white like uncooked grains of rice….I picked them up and rolled them around to see what they were and they were squishy….that's when I realized…
They were fucking fly eggs. In the 20 min it took me to eat one steak the other had been bukkaked by house fly eggs right in a pocket of fat. 3 separate clumps of eggs. Ended up so disgusted I threw the whole thing out.
Moral of the story: rest your meat in the microwave or the oven, at the very least cover them with plastic wrap. $26 down the drain 😞 (Fly eggs not pictured, threw it out immediately)

Wow, people here, suck, and assume a fly around a house means you’re dirty. Sorry about your steak, but you should always cover meats.
That sucks ass because those steaks look tasty as hell. I’m glad you enjoyed one before flies got to it. I hate flies fucking things fly on in the moment you open your screen door and then hide whenever you break out the old swatter
That’s crazy. We leave food out all the time before packaging it for leftovers and haven’t had (or noticed 😳) this happen
I typically cover stuff in foil when resting, and actually for 2 reasons….
The first one is that I don’t want stuff to happen like flies or whatever else, but that does not mean I think you are nasty for opening the door to bring your food in from the grill either.
The second reason, actually the main one…
Stuff cools down not as suddenly and it seems to help in the keeping it juicy department to do a more gradual longer rest.
I mainly do this with tri tip, pork tenderloins, ribs and sometimes steaks too… sometimes while we finish up a side perhaps.
Pulled pork is a whole different procedure but I will not drag you into that here since you were talking about those yummy looking steaks.
Sucks that you had a very aggressive fly.. that’s just some bad luck right there, people have grilled outside and eaten outside millions of times without that happening.

Flies are going to get in no matter how clean you keep things. I put a Zevo light trap in the kitchen and the difference it made was astounding.
Yep, when I was a young man, my pop always told me that I always needed to wrap my meat. Funny, I never saw him grill or cook anything though….
I have a toaster oven/air fryer and I can set it to 150F and I keep my steaks there to rest. Luxurious.

This sucks. Sorry. While it doesn’t change what happened, the one good thing is you caught it before packing it up. Imagine if you prepped the next dinner and then you saw it when plating it. But then again, that would suck as well.
I use those microwave plate covers from Dollar Tree. We have cats and don’t want flying fur on the food.
you seared your steaks for too long. it’s coal on the outside and has a large grey band. dry brine also needn’t be 48hrs long.

On a semi related note, get one of those bug-a-salt spring powered guns. No fly lasts more than a minute in our house now. I also always cover food in our house, as we have a greedy curious cat.
