Hi friends, welcome to my kitchen. My name is Anna. Today we’re going to cook the famous pioli cookies. And let’s pretend we have an Italian grandma. For this recipe, we’re going to need two packs of almond paste. I’m using solo, one cup of pine nuts, half a cup of sugar, two large egg whites, and half a teaspoon of salt. I’m starting with chopping up the almond paste so it’s easy to work with. Then I toss it into a food processor and pulse it until it breaks into little crumbles. Now I’m adding a half a cup of sugar. You can adjust the sweetness if you would like. I personally don’t like super sweet cookies, so it’s perfect for me. Now we need to add a half a teaspoon of salt and pulse everything together. Now I’m adding my last ingredient, egg whites. I’m whisking them up lightly. and before adding to the dough. And then we pulse all the ingredients together until it forms a smooth and sticky dough. Once it’s ready, it’s time to shape. I take small scoops of the dough and roll them into little balls. The texture is sticky, so I like to keep my hands slightly damp to make shaping easier. Then I roll each one generously in pine nuts, gently pressing so they stick to the surface. The pine nuts give them that signature look and an amazing nutty crunch when baked. I place them on a baking sheet with a little space in between. Then they go into a 350 Fahrenheit oven for about 13 minutes. I just watch them for that golden color and light crisp. Just like that.
