100g Protein Pasta Salad

    ###Ingredients

    * Juice of one lemon
    * 2 fat, minced garlic cloves
    * 2 tbsp extra virgin olive oil
    * 1/2 tbsp dried oregano
    * 1/2 tsp salt, + more to taste
    * 1/4 tbsp black pepper
    * 80g fresh kale, de-stemmed, washed and roughly chopped
    * 1/3 of a red onions finely diced
    * 200g dried pasta
    * 2.5 tins mixed beans, about 600g drained weight
    * 1 red bell pepper, finely chopped
    * 1 yellow bell pepper, finely chopped
    * 1 small cucumber, finely chopped
    * 200g crumbled extra firm tofu (I used fermented tofu, if not using fermented tofu season the crumbled tofu with lemon and salt before adding)
    * Small handful of chopped parsley
    * 70g chopped, pitted Kalamata olives
    * 1 red or green chili, finely chopped (optional)

    ###Instructions

    1. Prep and chop all the veg, drain the beans and cook the pasta in very salty water, according to the packet instructions. Measure out the dressing ingredients so you’re good to go.

    1. In a large mixing bowl, add the lemon juice, garlic, olive oil, oregano, salt and pepper, then whisk together and season to taste.

    1. Add the kale leaves and massage for 2-3 minutes with your hands. You want the leaves to soften. Taste one to see! Then add the raw onion and toss well.

    1. Add all the rest of the ingredients and give a good toss with your hands (or tongs if you like). Serve with some toasted seeds for crunch!
