    A few of those look like Fiorentina al Bistecca, but the others I have no clue. If I am correct, that’s pretty much how it is done- a thick cut seared on both sides with the middle quite rare. Italians don’t ask you how done you want it- that’s how it comes. First time I had it I didn’t care for how rare the middle was, but as I have aged I have come to appreciate it for the wondrous meal that it is.

    Sure it’s cool but I’d rather a modest 14oz rib or strip cooking one of these looks impossible n smoking steak seems like a waste 🤷
