make lunch with me because I do need to actually eat something other than cookies every once in a while. And today I’m making one of my all-time favorites, the ultimate grilled cheese, but grown-up style. It’s crispy, super cheesy, and only takes a few ingredients. First step is a good amount of butter in the pan. That’s going to give you that crispy exterior that we all love. I’m using sourdough, but really feel free to use whatever you have on hand. Then top with three slices of monster cheese. It melts like a dream and is just mellow enough to balance the other flavors. I also really like using havari, but you could use mozzarella. You can use any cheese you like. On the other slice, spread a thin layer of chipotle ioli for a little smoky kick. Close it up. Give it a gentle press and let it cook low and slow. That really is the tip here. If you heat it too quickly, the outside will burn and the cheese won’t melt. Also, be careful flipping because I definitely burn myself. But look at that cheese sizzle. Oh my gosh. This is really one of my favorite recipes. My husband loves it. My kids like it. I make it for lunch, dinner. I top with a little bit of cheese. I personally love pecarina romano, but you can use parmesan as well. And then look at that. There’s no real way to eat this aesthetically, but the recipe is too good not to share. I have an excessive amount of basil and I have been making Pesto…. And I looooove grilled cheese. I'm going to try this but I don't have the other sauce or fancy cheese lol but I will make it my own anyways..
