Micronesian Teriyaki Bowl
Chicken
1 lb boneless skinless chicken thighs
1 cup flour
1 cup cornstarch
1 tsp baking soda
2 tsp salt
1 tsp MSG
1/2 tsp white pepper
1 tsp garlic powder
3/4 cup cold water
Oil, for frying
Teriyaki Sauce

Pineapple
Rice
Green onions
Avocado
Sesame seeds

Clean chicken and slice into tenders.

Mix flour, cornstarch, baking soda, salt, msg, white pepper, and garlic powder. Whisk until combined. Remove about 1/3 of the dredge. Dry dredge the chicken tenders.

Add water to the remaining dredge. Whisk until smooth. Dip the dredged chicken tenders into the wet batter.

Fry at 350 degrees Fahrenheit in small batches until lightly golden. Drain. Heat oil to 400 degrees Fahrenheit. Return the tenders to the oil until a deep golden brown is achieved.

Toss with teriyaki sauce.

Cut pineapple in half. Using a paring knife. Cut flesh of pineapple into chunks, careful not to pierce the rind. Remove pineapple chunks.

Fill pineapple with rice, chicken, sesame seeds, green onions, avocado.

Micronia has a unique way of making teriyaki chicken and it’s one of the things I miss most about living there. The ability to reverse engineer really comes in handy when you’re craving something you had in your travels. I start by washing my chicken and disinfecting my work area and then preparing the dredge. They deep fry it in a Korean style batter and that gives it such a pleasant crunch. I reserve about a third of the dredge and set it aside while I cut my tenders. One of my favorite restaurants out there uses whole bone in chicken thighs, but this way is better for the pineapple boat. I start with a dry dredge and then I make a wet batter. I dip the dredge chicken tenders into my wet batter. Then I deep fry them in small batches, careful to avoid allowing them to touch cuz they’ll stick together. I did do a double fry so that the crispiness will hold up to the sauce. I wash my pineapple in my disinfected sink and then I cut it in half. Once I get it cut in half, I use a smaller pairing knife to cut chunks. Then I can easily pick the chunks out to hollow out the pineapple. I load it up with rice, chicken, sesame seeds, green onions, and topped it off with avocado.

  6. About 15 years ago, I went to this Pakistani restaurant on Victoria island in British Columbia on vacation with my mom. It was a lovely little spot run by an East African family. My mom being a Pakistani Nigerian was very excited to meet them lol. By far the best chicken tikka masala ive ever had, i’ve been trying to duplicate it ever since.

  10. I don't travel much but I always make sure to order my take out meals from locally owned restaurants that are family owned. My favorite is Caribbean Haven, which is owned by a Jamaican husband & Filipino wife, so they do a fusion menu that cannot be topped.

    As someone with disabilities who is STILL fighting to get on actual disability I appreciate this so much! I cannot stand for any length of time. At best I have minutes, had another fall – I have POTS & a slew of other comorbidities. Anything that can help me feed myself and on occasion my husband and nephew would be exceptional! Thanks for all you're doing. AND for passing out information to others on what it can be like to simply feed yourself on certain days.
