I’m drowning in cucumbers from my weekly farm share so I was glad to see this recipe pop up in today’s email from The Kitchn. Since I’m a peanut* hater, I subbed tahini for the peanut butter and sesame seeds for the chopped peanuts. Also, cut the sambal olek in half and left out the optional chili flakes because I’m a spice weenie—it still had a nice kick—and used regular cucumbers instead of the suggested English variety. Basically, I changed the whole recipe.😁 It’s a nice option to have in addition to the usual vinegar based cucumber salad.
