With more seasonings the taste could've been better… but the texture is just awful. Blended an avocado with some eggs, cottage cheese, and a bit of parmesan. I will not be doing this again.

Maybe blend the eggs and cheese, make a scramble/omelette. Then put it on top of, or under, thinly sliced avocados.
Or even better, whisk up the egg and Parmesan. Make an omelette and put the cottage cheese inside. Then put the avo on top of that. It’s still soft in soft on soft, but they would retain their original textures. Add some salt n pepper and you’re probably good to go
