The Michelin Guide France revealed its 2025 restaurant selection in the Moselle town of Metz, celebrating its 125th edition with 78 new stars.
Two restaurants – Le Coquillage in Brittany and Christopher Coutanceau in La Rochelle – joined the prestigious three-star ranks. Le Coquillage, led by Hugo Roellinger, offers refined, sea-inspired dishes rooted in family tradition. Christopher Coutanceau (pictured), known as the “fisherman chef”, returns to the top with a sustainable, seafood-focused menu and joins the Passion Dessert list thanks to pastry chef Benoît Godillon.
The guide now lists 654 starred restaurants across France, with nine new two-stars, 57 new one-stars, and 10 new green-star venues, recognising eco-friendly practices. Michelin Guide director Gwendal Poullennec praised the selection as a reflection of France’s enduring culinary excellence. The Bib Gourmand list, honouring great value, adds 77 new entries.
The Michelin Guide France 2025 includes a total of 31 three-stars, 81 two-stars, 542 one-stars, 100 green-stars and 399 Bibs Gourmands.
