Lemon Blueberry Pancake Bake✨ Saturday mornings call for pancakes 🥞 This healthier and protein packed pancake bake is delicious AND super nourishing! I love baking pancakes to skip the griddle and stress of perfectly flipped pancakes! The Lemon blueberry flavor is perfect for the Spring but these can be customized to any flavor you like!
Here’s what you need:
2/3 cup oats
1 egg
1/2 small ripe banana
1/3 cup plus 1 tbsp Greek yogurt
1/4 cup blueberries
1/2 tsp vanilla extract
1/2 lemon, juice and zest
1/4 tsp baking soda
1/2 tsp baking powder
1/8 tsp salt
Optional: 1 tbsp maple syrup for added sweetness
Preheat oven to 350F. Blend together all ingredients except the blueberries until smooth. Pour onto a small greased baking dish, adding the blueberries on top. Bake for 18-22 until a toothpick comes out clean.
