What wood do you prefer for jerk chicken. I went pecan. My research led me to pimento wood (I don’t have any).

    Pimento is allspice so maybe put some all spice berries (not powder) into the flames

    Pecan or hickory are my mains. I used whiskey barrel staves before and that was tasty.

  5. I made jerk chicken (utilized the vortex, was splendid) a couple weeks ago and used cherry – I was looking for a lighter smoke profile, and it seems to help with that nice mahogany color. I wouldn’t hesitate to use pecan.

    Pimento really does make a huge difference in the final product. There are some places online you can get it, but it doesn’t come cheap.

    I make my own jerk, lots of good recipes out there on yt

    I grow my pimento and scotch bonnets

    Dried allspice berries and bay leaves in a packet near the charcoal. Soak them a bit first so they don’t ignite.

    Pimento for the win. Apple in a pinch. Maybe a combo of mesquite and cherry.

    I use a combination of apple and cherry with some whole allspice thrown into the fire as well. It’s become impossible to source pimento in the States because Jamaica’s really clamped down on exporting it.

    I use my own wood. I tried jerking someone else’s wood and it wasn’t my thing.

    Pimento wood is the traditional way. Hickory would be a decent substitute probably also along with pecan. I like to marinate my chicken for 24hrs in Walkerswood Jerk paste also.
