Only olive oil and Loco Gringo seasoning smoked with apple chunks for an hr or so at 285F, then rolled it up to 350 for the last 15-20 min. Total cook time little over 90 min. Turned out squirting juicy..

    I do mine 400-425 the whole time. No reason to fiddle with temps IMO
