The BBC on Wednesday fixed a recipe for Cacio e Pepe on the food page of its website after a faulty previous version was called out by Claudio Pica, the head of the Rome and Lazio branch of the Fiepet-Confesercenti business association.
The first version listed four ingredients for the traditional Roman dish: spaghetti, pepper, parmesan and butter.
But the original recipe does not feature butter and requires pecorino cheese, not parmesan.
The BBC amended its recipe, but it still included a tip that would be seen as heresy to Italian cooks, suggesting people struggling to get it right “try adding a slick of double cream to the mix”.
