Hey everyone, welcome back to Ely Folio where we turn simple ingredients into something special. Today I’m going to show you how I make my easy orzo pasta salad. It’s fresh, flavorful, and it comes together in under just 30 minutes. Let’s get started. To start this dish, I like to pre- chop all of my ingredients since the orzo pasta salad cooks pretty quickly um in this particular recipe. The vegetables you will need to chop for this are parsley, tomatoes, cucumbers, red onions, marinated artichokes, black olives, and feta cheese. After you’ve chopped up all of your veggies and your cheese over medium heat, you’re going to take a pot, fill it with water, and bring it to a boil. Next, you will need to season your water with some lemon pepper seasoning. Now, trust me, this is the secret to adding bright flavor and dimension to this dish. Next, you’re going to add 1 and 1/2 cups of orzo pasta and cook this until it’s al dente. And then next, you’re going to drain out the pasta water and pour the orzo pasta salad into a mixing bowl. Now, I recommend dressing this orzo pasta salad with seasoning while it’s still warm since pastas tend to absorb flavors a lot easier when they’re still warm. Now, in your mixing bowl with your warm orzo pasta, you’re going to add tomatoes, your chopped cucumbers, your chopped red onions, your marinated artichokes. You can add a little bit of that uh the marinade from the artich chokes to this as well for extra flavor. Um black olives and feta cheese. Then you’re going to give your salad a light toss to sort of mix in everything together. Then you’re going to season the salad with a nice fresh squeeze of lemon juice. Don’t use a bottle. Use a real lemon here. Then you’re going to add your lemon pepper seasoning, Italian seasoning, and my favorite Italian dressing here, Kins Zesty Italian. Give your pasta salad at least one more last toss to make sure everything is coated and mixed together. And allow this to rest in the refrigerator before serving.
