In Danish we call this “kalvecuvette”, but I don’t know the English word
Seared on a pan on both sides, then put into the oven to cook for a few more minutes. It's a bit overcooked, as I went to the bathroom, but it turned out pretty nice I think

It’s probably a veal picanha, hence why it might look more overcooked than it probably is.
