Fresh Tomato Basil Pasta
Ingredients:
* 1 lb ripe tomatoes, chopped
* 1 small onion (optional, to your taste), finely chopped
* ½ cup fresh basil leaves, tightly packed and chopped
* 1/2 cup-extra virgin olive oil, you decide how much you prefer.
* 2 cloves garlic, minced
* Salt and freshly ground black pepper, to taste
* 1 lb angel hair pasta (or your favorite type)
* Freshly grated Parmesan cheese or mozzarella , for serving.
Instructions:
1. In a large bowl, combine the chopped tomatoes, onion, basil, olive oil, garlic, salt, and pepper.
2. Let the mixture sit at room temperature for at least 1 hour, stirring occasionally. This allows the flavors to meld together.
3. Cook the pasta according to package directions. Drain.
4. Toss the hot pasta with the tomato mixture until well coated.
5. Serve topped with plenty of freshly grated Parmesan or mozzarella!
6. Enjoy!
It’s tomato season and this recipe is delicious. Start by slicing up your tomatoes and then your onion. And then to that we’re going to add in some fresh basil. You can chop this as small or as large as you prefer. Then you’re going to add in some minced garlic and stir it together. Then of course we’re going to add in some olive oil and some salt and pepper to taste. After that, you’re going to cover it up and let it sit out for a minimum of 1 hour. Don’t put it in the fridge. You just leave it on your counter. Then you’re gonna cook your favorite pasta, whichever one you prefer, and top it with these amazing fresh ingredients. It tastes so good. And then, of course, you know, we’re going to add Parmesan cheese on top. That’s Jason’s favorite. But if you guys are like me, I topped mine with mozzarella. It’s amazing.
