Homemade Greek Goodness

This Mediterranean-inspired dish is a perfect blend of tender chicken, fluffy pita bread, a zesty salad, and smooth tzatziki sauce.

Greek Chicken Marinade:

Ingredients:
– 2 lbs boneless, skinless chicken thighs
– 1/2 cup plain Greek yogurt
– Juice of 2 lemons
– 2 Tbsp olive oil
– 1/2 white onion and 4 garlic cloves (blended)
– 1 Tbsp fresh basil
– 1 Tbsp thyme
– 1 Tbsp oregano
– 1 Tbsp all-purpose seasoning (like Season-All)
– 1 tsp black pepper
– 1/2 Tbsp smoked paprika

Instructions:
1. Mix all ingredients together in a bowl.
2. Add the chicken and coat well.
3. Cover and marinate in the refrigerator for 1-2 hours.

Grilling:
1. Preheat the grill to medium-high heat (375-400°F).
2. Thread the chicken onto vertical skewers.
3. Place the skewers on the cooler side of the grill (indirect heat).
4. Rotate every 10 minutes for about 40 minutes, or until cooked through.

Pitta Bread:

Ingredients:
– 1 cup warm water
– 2 1/4 tsp instant yeast (1 packet)
– 1 tsp sugar
– 1 tsp salt
– 1 Tbsp olive oil
– 2 1/4 cups all-purpose flour

Instructions:
1. Make the Dough
– Mix the warm water, yeast, sugar, salt, olive oil, and 1 cup of flour.
– Slowly add the rest of the flour until the dough is soft and slightly sticky.
– Knead for 1 minute.

2. Let It Rise:
– Place the dough in a greased bowl, cover, and let it rise for 40 minutes (or refrigerate to use later).

3. Shape the Pitas:
– Divide the dough into 8 pieces.
– Roll each piece into a thin circle. (Doesn’t have to be the Perfect circle)

4. Cook:
-Heat a lightly greased pan over medium-high heat. Cook each pita for about 2 minutes on each side until golden brown and puffed.

Store the pita bread in an airtight container. At room temperature, it will last for 3 days, while in the refrigerator, it will last for 5 days. You can also freeze the extra pita bread for later use.

Greek Cucumber and Tomato Salad:

Ingredients:
– 2 cucumbers, sliced
– 3 Cherry tomatoes, cut into wedge
– 1/2 red onion, thinly sliced
– 1/4 cup olive oil
– 2 tablespoons red wine vinegar
– 1/2 teaspoon dried oregano and Italian seasoning
– Salt and pepper to taste
– Optional: feta cheese or olives

Instructions:

1. Combine the sliced cucumbers, tomatoes, and thinly sliced red onion in a bowl.
2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, Italian seasoning, salt, and pepper.
3. Pour the dressing over the vegetables and toss to coat evenly.
4. Top the salad with feta cheese or olives if desired
5. Chill the salad in the refrigerator for 10 minutes or serve it immediately.

Easy tzatziki:

Ingredients:
– 1/2 cups plain Greek yogurt
– 3/4 cup grated cucumber (squeeze out the excess water)
– 3 tablespoons lemon juice
– 2 garlic cloves, minced
– 2 tablespoons chopped fresh dill
– 3/4 teaspoon salt
– 1/2 teaspoon black pepper

Instructions:

1. Grate the cucumber and squeeze out the excess water.
2. In a bowl, combine all the ingredients and mix well.
3. Adjust the seasoning to taste.
4. Serve the tzatziki immediately or chill it in the refrigerator for later use (it will keep for up to 4 days).
