There is nothing that quite soothes the soul better than good food. And this summer, my heart has been irresistibly drawn to the vibrant, sun-kissed flavours of Mediterranean cuisine. Fresh seafood, expertly cooked vegetables harvested straight from the earth, and just the right amount of healthy fats to leave your skin glowing and plump — Greek food is one of my absolute favourites.
So while I expected a long weekend of salt and sea when I descended on Nido, Mar-Bella Collection, Corfu, it was the full belly and satisfied senses I really walked away remembering.
Nido Suites are just one of MarBella Collection’s luxury stays. The adults only stay sits on the mountainside of the west side of the island, overlooking an expanse of the Ionian sea towards neighbouring islands and backed by endless olive and citrus trees, the smell of lavender, rosemary and jasmine inescapable.
What is the hotel like?
The Nido Suites consist of 70 rooms, all with a breathtaking view of the ocean and varying from private pools and whirlpools to private verandas. The suites are set over a sprawling compound that moves up the mountain, but don’t worry, you can buggy your way around to avoid being completely out of breath when you get to dinner.
There is a picturesque infinity pool surrounded by lounge chairs that overlook the ocean, relax, drink in hand or indulge in a delicious meal at Aquavit, which has a fresh selection of small bites and delicious local cuisine, including one of the best gyros I have ever had.
Down the hill lies San Giovanni and Apaggio, both with their own breathtaking views and food to match. And just across the road is the stunning pebbled beach with crystal blue waters and beachside drink and food service.
Looking up at Nido feels like discovering an oasis – the red brick roads set against bright blue pools, with bougainvillaea and flowers blooming in vibrant shades of orange, pink and purple.
Now tell us about the food?
The hotel is a must-visit, but it’s the culinary delights and Nido that truly set it apart. During my trip, I was fortunate enough to attend the fifth season of their highly coveted Greek Chefs Abroad series. This annual event brings esteemed Greek chefs—who have travelled the world to expand their cooking horizons—back to Greece for a brief chance to offer guests the very best, all while overlooking the breathtaking views of the Ionian Sea.
We were lucky to experience the expertise of chef Takis Panagakis, under whose guidance we enjoyed a five-course tasting menu paired with wines. Dear reader, I am not writing this lightly – this was some of the best food I have ever had. From the moreish mini gyros made from oyster mushrooms and the decadent fasolakia with fermented broth (I am still dreaming about that broth) to the perfectly cooked lamb and dreamy desserts, the entire experience was a masterclass in elevated Greek classics crafted with local ingredients and genius cooking.

The food across the board at Nido is truly exceptional. A regular dinner at Appagio is outstanding, and the buffets at breakfast or dinner at San Giovanni are consistently elevated and easy to return to time and again.
You can even partake in a well-led wine tasting during your stay to sample some of the region’s best tipples, then impress everyone at dinner by showcasing your newfound expertise on the notes and flavours.
What else is there to do?
Well, if lounging by the beach or poolside isn’t quite your speed. No worries, as there are countless activities run by the hotel or nearby to enjoy. Head out on a half-day boat tour to Southern Corfu to enjoy the clear, shallow waters and beautiful coastal views. This is complimentary from the Marbella dock on the beach, but guests from the sister hotel, Marbella, also attend, so it is not adults only.
The hotel is a 40-minute drive from Corfu Town, and is well worth a journey into if you have time. It’s super easy to rent a car, and if you’ve booked the premium Signature Life at Nido service through the hotel, you can receive a one-day complimentary car booking. I would highly recommend going for a drive around the island, as it’s a great opportunity to visit not only Corfu Town but also explore other sides of the island and beaches like Paleokastritsa or hit up La Grotta.
There is also a bus stop directly outside of the hotel that can take you right into the centre of town for €2. Make sure to hit up Mikpo Cafe for a delicious cocktail (I recommend the spicy mango margarita – YUM) or coffee, and Tsipouradiko for dinner, stopping to pat some of the local cats along the way.
Down on the beach, you can hire paddleboards, jet skis or self-captained boats for a day on the water. Or you can get your sweat on at morning yoga or in the gym. The hotel has partnered with Oyogo to create complimentary yoga, Pilates and bodyweight classes you can enjoy from May through to September. Make sure to book in for a spa treatment while you’re there to really unwind.

So if it’s a truly tranquil Greek stay you’re after on the islands, you can hardly go wrong with a trip to Nido. Just prepare to leave with a craving for Mediterranean food and salty hair.
