FRESNO, Calif. (KFSN) — The view 12 stories up at Table Mountain Casino in Friant is epic. So are the dishes at Sukai.
“It definitely is really different from every place else here in the Valley, so I would say it’s one of a kind,” says Sukai Bartender, Mia Franco.
You can take a break from the slots for a slice of hamachi, or yellowtail.
“This is one of the most popular sashimi items,” says Sukai Executive Chef, Masa Shiga. “It’s very simple — sliced yellowtail, jalapeno and micro cilantro on top. I put it on a homemade pon sauce.”
Chef Shiga has a great sense of humor.
“All the fish is from Japan,” Shiga said.
The signature dish at the bar is the Sunset Roll.
Peruvian pepper paste adds a little spice to your life. Perhaps pair it with the Sukai Sunset.
“It’s going to be a pineapple vodka with a grenadine float,” Franco said.
Chef Masa spent 35 years creating dishes in Las Vegas at Caesar’s Palace, Nobu and the Mirage.
You’ll find the tuna poke nachos light and tasty.
“Fried wonton chips with a poke tuna with a spicy mayonnaise,” Chef Masa said.
Regulars enjoy the “White Lotus.”
“It’s going to be a raspberry vodka with peach Schnapps and some sweet and sour,” Frano said. “It is one of our sweeter drinks for sure.”
You can have a ceviche shot.
Chef Masa’s creations keep visitors happy.
That backdrop is like the cherry on top.
