today we’re making zupa lenti or lentil soup and start by finally dicing some onion carrot and celery and in a pot heat a generous drizzle of olive oil add all of your vegetables season with salt and pepper and sauté until soft and fragrant next stir in a cup of lentils and some bay leaves and pour in enough water to cover bring it to a boil then reduce to a gentle simmer and add your crushed tomatoes give it a stir cover and let it cook for about 45 minutes stirring occasionally until the lentils are tender when it’s ready remove the bay leaf and adjust the seasoning to taste Ladle the soup into bowls and drizzle with extra virgin olive oil and that’s it zupa ltio simple hearty and absolutely delicious

Instructions
In a large pot, heat olive oil over medium heat.
Add the onion, carrot, and celery, and sauté for about 8-10 minutes until soft and translucent. Season with salt and pepper.
Add the lentils and bay leaf and mix well.
Pour in 4 cups of water or vegetable broth.
Bring to a boil, then lower the heat to a gentle simmer and add the tomatoes.
Cover and simmer for about 45 minutes, or until the lentils are tender, stirring occasionally.
Remove the bay leaf, taste and adjust salt and pepper as needed.
Ladle the soup into bowls and drizzle with extra virgin olive oil.
