Air-fried ratatouille is made with zucchini, onions, and tomatoes, and it’s perfect as a side dish, appetizer, or paired with some crusty bread.

Ingredients:
Vegetables:
* 1 medium zucchini * 1 large tomato * 1 large red onion
For the Sauce:
* 2 tbsp olive oil * 2 cloves garlic, minced * 1 tsp dried thyme * Salt and pepper to taste * 1/2 cup tomato sauce (optional)
Instructions:
1. Thinly slice all vegetables. Aim for uniform thickness for even cooking. 2. Make the Sauce: In a small pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Stir in dried thyme, basil, salt, and pepper. 3. Assemble the Ratatouille: Arrange the sliced vegetables in a circular pattern, alternating colors and types. Start from the outer edge and work your way in. Drizzle any remaining sauce over the top. You can also brush a little olive oil for added flavor. 4. Cover and bake in the air fryer at 350°F until the vegetables are beginning to become tender, 20 minutes. Remove the cover, sprinkle with the Parmesan cheese (optional), and continue to bake until the vegetables are tender, 5-10 minutes.

This is actually a Tian. It’s pretty much ratatouille ingredients-wose, but the way you prepared and baked it vs cooking it as a stewed vegetable dish are the big difference. Points for putting it in an air fryer!
