Chef Margarita Forés’s legacy lives on as CIBO looks ahead, marking more than two decades of fresh, modern, and timeless Italian cuisine through special dining offers.

In 1997, Chef Margarita Forés set out with a dream: to bring real, Italian home-style cooking to Manila. This vision gave way to CIBO, undoubtedly one of the country’s most beloved dining spots. While the culinary maven has since passed, her legacy of love and authenticity continues through AF Hospitality, run by her family and helmed by her son Amado Forés. With their clear-sighted vision of the future, CIBO looks ahead as it celebrates 28 years of incredible flavors, inviting loyal customers and first timers alike to rediscover the brand that they’ve loved for decades.

CIBO reimagines the dining experience for the next generation, yet remains firmly rooted in its longheld philosophy of freshness, simplicity, and quality—core tenets that have made it the landmark, household name it is today. Besides celebrating this milestone, the dining concept is also paying tribute to the community that made its longevity and success possible, introducing an array of special offerings for its diners.

Limited Edition Dishes And Pastries

Among the most anticipated highlights this year is the launch of limited edition dishes from CIBO’s Executive Chef Jorge Mendez. These bold, playful interpretations of Italian staples will be available from August 5 to September 30, 2025.

The first on the list is the Tubettoni alla Nduja, a spicy and creamy pasta dish featuring Nduja sausage, burrata, tomato tsukemono, and stewed tomatoes. Complementing this is the Nduja Pizza, which is topped with tomato sauce, mozzarella, Nduja sausage, and burrata. Both these dishes bring a touch of Southern Italy’s spice and warmth to CIBO’s well-loved menu.
