Based on the marbling and labeling, I think this is mature sheep but the dude at the counter said that it’s goat; who’s right?

    Depending on country of origin, mutton can refer to either mature sheep or goat.

    I’ve read people say mutton is wild sheep. I have 0 knowledge in the matter, but curious for an answer.

    Also rule of thumb: Lamb 6-12 months
    Hogget 1-2 years
    Mutton 3 years+
