Hey guys!

Been doing ramen for quite a few years now but was always limiting myself to tare, toppings and oils until recently where I deep dived a bit more into doing everything from scratch!

Tonight was a sake based shio tare with garlic and green onion duck fat. A 50/50 mix of dashi and paitan soup. Two different types of chicken chashu: poached breasts and braised thighs. The usual ramen egg, spring onion and nori and some homemade Tokyo style noodles!

It's been a lot of fun and making the soup and noodles does make a significant difference on top of being a great experience.
