Thanks for all your help guys, after 3 failed attempts I’m not going to get killed by my mom for wasting all that flour. I am completely open to critique how can I make it better? How can I make it more… sourdoughy? How do I get a thicker crust?
(Yes I know it’s a bit burnt)
Also what recipes can I try does anyone have a good cinnamon roll or focaccia recipe? Or a website with good recipes? Anything at all guys thank you 😋

To make the bread more “sour” you can either increase the hydration or increase the cold proof time.
To make it have a thicker crust, you can decrease the hydration.
To score it easier and get a nice ear, I’ve found that letting it cold proof for a day or so allows me to cut into it right out of the fridge (score at a 45-degree angle or sometimes even more shallow) and then throw it right into the oven straight after coming out of the fridge and scoring. Works for me at least. But I don’t get as round of bread as you so you’re doing very well!
