Tuna, bean and red onion salad is a classic combo that’s super easy to make. Use a high quality tuna that will also hold its shape and add herbs like parsley to add a touch of freshness to the dish. I love tomatoes so I’ve served mine with some beautiful ones as the base. And if you’re veggie you can replace the tuna with different types of beans.

Serves 2

Ingredients
150g preserved tuna in olive oil
300g cooked white beans
1 red onion
2 tbsp white wine vinegar
5g parsley
3 tbsp of good extra virgin olive oil
4 different types of tomato as the base (sliced into large circles)

If there is one salad that I’m really missing from Italy, has to be this one. My parents, they used to make it all the time and it’s so simple and a perfect combo. Tuna, beans, and red onion. Let me show you how to make it. The first thing we’re going to do is to slice the onion really nice and fine and pickle it with a little bit of vinegar and a touch of salt. Now, give it a good mix and leave it on one side for about 5 minutes. Meanwhile, chop some fresh parsley. Tuna goes with the onions. Add your beans to the bowl. And yes, you need a lot of beans. Finally, the parsley goes in and a drizzle of good extra virgin olive oil. Give it a good stir all together. Break down that tuna a little bit. Look at that. Ideally, you want to set this overnight or for a few hours in the fridge, but it’s delicious already as it is. I like to serve mine with some sliced tomatoes as the base. Place the tomatoes all at the bottom of the dish. Now, a touch of olive oil, a sprinkle of sea salt, and finally serve the tuna, beans, and onion all over. Beautiful curly parley for garnish.   2. I would rinse that beans and toast it a little with some garlic chilli and grape tomatoes with some olive oil in the end mix it with Tuna and pickled onions .
