Smoked a chuck roast like brisket and turned out nearly as good as a brisket. Could have had more smoke ring. Smoked at 225 for 4 hours until 165, pulled wrapped in butcher paper with tallow, back on until 203 internal.

I’ve been meaning to try a Chuck roast as practice b4 I do a whole brisket. How long as the total cook? Did u bump up the temp after wrapping? Did you rest and how? How big was the roast? Was it prime? Cause it sure looks like prime. Also, compared to a properly done brisket, how good was it? Like 90% as good? Thanks in advance.

In my experience Chuck fuckin blows brisket out of the water for price/commitment/taste/duration/etc. My absolute favorite beef cut to smoke and get friends and family hype on a budget. Check my post for the first one I tried about a year ago. Done so many since then 🤙🏼

Before brisket was popularized barbecue was shoulder clod. Essentially chuck roast and other cuts. A whole shoulder easily topped 20lbs so it was a long cook.

I’d consider a perfectly cooked chuck roast like yours as half way between brisket and prime rib. Do you agree?

Good stuff, I make it similar, but wrap in foil with tallow. When done, it goes into the fridge so I can finally slice it for pho. Occasionally well do nachos, tacos, etc. always comes out great.

Chuck roast is so good on the smoker. When I make a Mississippi pot roast, I’ll smoke a chuck roast for about 2-3 hours and put it in the Instant Pot to finish, along with the ingredients for the Mississippi pot roast. Amazing flavor
