What? This store-bought hummus has cheap oils, sugar, and gums in it? No, thank you. I’d rather make my smoky roasted red pepper hummus. In a small blender, I add one roasted pepper, garlic, a can of drained chickpeas, lemon juice, 1/4 cup of tahini, and the only oil that should be used for making hummus, extra virgin olive oil. I season with smoked paprika, cumin, and salt. For a better texture, I add two ice cubes before I blend. That is all. It’s ready before you know it and it’s faster than going to the store. Look at that beautiful texture. It’s so creamy. Before serving, top it with olive oil, a few leftover chickpeas, and some smoked paprika.
