I decided to take the chicken, and finish up the dressing for lunch.
This salad is inspired by a Vietnamese vermicelli bowl. I made brown rice vermicelli noodles, the leftover chicken, red napa cabbage, carrots, cucumber. I added some chopped green onions, mint, and cilantro. Topped with leftover avocado and roasted peanuts.
