My experience is that they will over ripen to red.

Reds smoked with pecan wood = chipotle. have fun!!

They will always turn red eventually, the flavor and spice level changes. Personally I wouldn’t wait too long after it turns red to harvest.

Had some go red this week and after trying them, I don’t think I’ll pick another green one. Flavor was amazing with the sweetness at the beginning.

After growing jalapenos for the first time and trying them once they got red I really have no idea why green jalapeños are so standard. The red is so much more flavorful. Now I let them all go red

Yea but once they get red, they get mushy quickly, I pick and cook with them at all different stages of growth, but that’s just me
