The Fat Duck in Bray, 3 Michelin stars by Blumenthal, has the exact same dish for their “Under the Sea” course. While not necessarily a plate, I think its pretty cool. I would assume, like in the picture and with Hestons dish, it’s eaten with a spoon and then totally valid in my book. I’ve worked for Heston so maybe am biased but I love this shit man! Plates can be fun too.
