Hello everybody. Welcome back for another video. Today we are making chicken breast with parmesan risoto. Let’s do it one bite at a time. Start with heating up avocado oil in a pot on medium heat. Season your chicken breast with some saone. I use one full pack for my chicken. Use some Mrs. Dash original seasoning. Use a generous amount of garlic powder. I used a lot of the onion powder. Let’s use some black pepper. Mix the seasoning around on the chicken so that the seasoning is dispersed all the way throughout the chicken. Your chicken should change colors. That’s how you know it is seasoned well. The oil should now be hot. Place your chicken inside of the pan. I cooked it on this side for 5 minutes. I flipped it over. I cooked the chicken for another 5 minutes. I flipped it over and cooked it for 2 minutes. I added some water to the pan. After the two minutes, I covered the pan up. Turn the stove completely off. Let the hot water cook the chicken for 15 minutes. After the chicken is done, pull it out the pan. Let it sit for 10 minutes before cutting into it. This will allow your chicken to rest. It keeps the juice inside. For the risoto, you will need a hot pot of chicken broth. I used one full box of the chicken broth and I placed it on medium heat until it got hot. Then I reduced it to a low temperature. Heat up a pan with avocado oil. Once your pan is heated, add some onion. Allow the onion to cook down. I added a generous amount of garlic. Let it cook until it is fragrant. Here you will see me using some white wine. I used a dry white wine, a chardonnay. Pour that into your pan until it covers the bottom. The best rice to use for risoto is the arbario rice. I used a cup and a half of the rice. Let the rice cook with the wine, constantly stirring the rice around. Let the wine cook out of the pan. After the wine cooks out of the rice, add two ladle fulls of your hot chicken broth. Stir your rice around until the chicken broth has cooked out of it. Your rice should be dry. You should see no liquid in the bottom. Now you will need to add two more ladle fulls of the chicken broth. Let the chicken broth cook out of the rice again. You will repeat the process of adding the chicken broth two ladles at a time for 30 to 40 minutes until your rice reaches the desired texture. Season your risoto. I used some garlic powder, onion powder, black pepper, some Mrs. Dash original seasoning. I added some butter. I used about a half a stick. Stir everything around. Add in some parmesan cheese. I added in a generous helping of the cheese. Stir the cheese around in the rice. Make sure everything is mixed around together.
