Lemon Garlic & Herb Chicken Pasta 🐓🍋🌿
Made this recipe using things I already had on hand and let me tell ya, it did not disappoint! It’s simple, tastes great and doesn’t take to long to make. Perfect for an easy weeknight dinner!
FULL RECIPE ⬇️
INGREDIENTS (~5-6 servings)
– ~3 lbs boneless skinless chicken breasts
– Extra virgin olive oil
– @kindersflavors Garlic & Herb Seasoning
– 1 lb package of fettuccine noodles
Lemon Garlic & Herb Sauce
– 2 tbsp butter
– 2 tbsp fresh minced garlic
– 1 shallot finely diced
– 10 oz package of baby spinach
– 1 jar of @sonomagourmet Lemon & Herb Riccota Sauce
– Salt & pepper to taste
Toppings:
– Fresh grated parmesan
– Fresh chopped parsley
Note(s): Some measurements are estimated, adjust ingredients to your liking.
DIRECTIONS
1. Add the chicken to a large bowl. Drizzle in olive oil and season generously. Mix till all breasts are well covered.
2. Grill the chicken over medium-high heat for ~25-30 minutes flipping half way through or until the largest breast reaches 165° internal.
3. While the chicken is grilling, make the noodles according to the package intrsuctions then get started on the sauce.
4. Get a large pan going over medium heat. Add in the butter. Once melted, add in the garlic and shallot. Mix and sauté for a few minutes then add in the spinach. Mix frequalty until all of the spinach is cooked down and most of the moisture is removed then add in the sauce. Mix till well combined then add in the pasta noodles and mix until everything is well incorporated. (optional: add ~1/2 cup of the pasta water to thin it out)
5. Once the chicken is done, pull it off the grill and let rest for ~5 or so minutes before slicing.
6. Plate it up & ENJOY! 🙌🏻

It didn’t take too long at all, making it perfect for a weekn night dinner. Do yourself a favor and give this one a try. So damn good. Starting with some chicken breast. We’re going to season those with a garlic and herb rub. The full details for that are in the caption. Get those on the grill over mediumigh heat. We’ll come back in about 10 to 15 minutes. In the meantime, I’m going to make the noodles. I’m using fetuccini. You feel free to use whatever you want. Back to the chicken. We’re going to give those a flip. Now, while the chicken’s finishing up, we’re going to put together the sauce. We got a large skillet going over medium heat. Dropping in some butter, fresh minced garlic, and a diced shallot. Let that cook for a few minutes. Then, we’re going to add in our baby spinach. Cook that down. Yes, I’m using jarred sauce. I don’t want to hear We’re going for convenient purposes. Mix all that till it’s well combined. Take the chicken off once it hits 165 internal. Let that rest for a few minutes. In the meantime, toss those noodles in the sauce. Make sure it’s well combined. Slice up that chicken and boom, you’re good to go.
