Ingredients (makes ~1½ cups):
• 1 cup green olives
• ⅔ cup black olives
• 2 tbsp extra virgin olive oil
• 2 tbsp sherry vinegar
• ½ tsp paprika
• 1 tbsp dried parsley
• ½ tsp sea salt
• ½ tbsp red pepper flakes
• ½ cup toasted panko crumbs
• ¼ cup Casa Flores Fried & Salted Marcona Almonds (crushed)
• 3 tbsp shredded Casa Flores Manchego cheese
Instructions:
1. Finely chop the olives and add to a bowl.
2. Whisk in oil, vinegar, paprika, parsley, salt, and pepper flakes.
3. Fold in remaining ingredients, reserving some for topping.
4. Spoon into a serving dish, top with almonds and panko—serve with crackers or crostini.
