Hey everyone! This has never happened to me before, but I think water got in the can during the water bath process. Is this a bad thing? Most things I have seen say that as long as the seal is good, it is fine. As you can see, they are very full! Thoughts? Thanks!

What recipe? I don’t see one for big chunks of beets that isn’t pressure canning.
Are the jars noticeably fuller than when they went in? (did you leave the correct amount of headspace and now it looks full to the top?) If yes, I’d be concerned that the brine isn’t as acidic from excess water, and I’d fridge it. If it looks mostly the same level but the very top looks slightly more clear, there are other explanations, and it’s probably fine.
IF you’re assuming water got in because you notice beet stuff escaped, THAT is a false assumption. Food can escape jars all the time (siphoning), and it’s not good, (and should be prevented by filling & cooling the jars correctly) but it doesn’t mean water got *in* and unless it’s extremely dramatic, it’s fine to leave jars as-is.
