Easy Chicken Caesar Pasta Salad. This pasta salad is one of my favorite high protein meals. One of my favorite ways to add protein is using @eatbanza pasta in a dish. Not only does their pasta taste amazing, it’s made with chickpeas which is a great way to add extra protein into your diet. This pasta salad makes the perfect meal prep too.

Salad
8oz Banza Rotini Pasta
2 chicken breasts, boneless and skinless
2 tsp Greek seasoning
4 cups romaine lettuce, chopped ½ cup parmesan cheese, grated
Optional : croutons
Dressing
1 ½ cups mayonnaise
2 tsp dijon mustard
¼ tsp black pepper
¼ tsp kosher salt
2 ½ tbsp lemon juice
2 tsp Worcestershire sauce
1 tsp anchovy pasta
2 small garlic cloves, minced
Preheat the oven to 400 degrees. Season the chicken breasts with the Greek seasoning. Bake for approx 20-25 minutes, or until internal temperature reads 165. Remove, let sit for10 minutes and then chop up. Cook the pasta according to the box’s directions, drain and set aside. Add all of the dressing ingredients to a bowl and mix until smooth.
Add the cooked pasta to a large bowl and add half of the dressing to the pasta. Mix well to allow the pasta to soak in the dressing. Add the chopped lettuce, chicken, parmesan cheese and the rest of the dressing. Mix well and top with croutons. Enjoy!

This is one of my favorite protein lunches. We are making a chicken Caesar pasta salad. I use Bonsza rotini pasta in this recipe to get that added protein to this dish. Add your cooked pasta to a dish. Toss in a little bit of that Caesar dressing. Add in the cooked chicken, the cheese, the lettuce, the rest of the dressing, and optional are croutons. Enjoy.
