The aromas rising from the charcoal grill are flavors etched into the memory of a thousand years. This time, we’re bringing you the charcoal-kissed flavors of Anatolia. If you’d like, you can take a screenshot now or scan the QR code to access the written recipe. This time, we’re cooking outdoors, and because köfte is so easy to make, it’s perfect for camping. First, we start by making the meatballs — “köfte” simply means meatballs or patties. Due to Islamic dietary traditions and the country’s highland climate, lamb is a staple ingredient widely used in Turkish cuisine.

Start by adding paprika. Then, add cumin powder. Next, add minced garlic — garlic paste or garlic powder works too — roughly the amount of two cloves, adjusting to taste. Then, add a bit of ground black pepper. Next, add grated onion, making sure to drain the juice first. In Chef Heston’s recipe, the diced onions are slowly sautéed until caramelized, which also helps reduce their moisture. We’re going with the campfire version, so we’ll stick to the traditional method. Now, add some salt. ere, I’m dividing it into two portions, because I’ll be adding chili to one half.

If everyone eats spicy food (or no one does), you can skip this step. Now, add some chili powder. Mix well, kneading just enough to develop a bit of elasticity (stickiness). Finally, prepare the parsley by trimming it and chopping it finely for later use. I also have some sweet basil on hand, which I’ll add to the minced meat later. Next, shape the minced meat into long logs and secure them with bamboo skewers. These bamboo skewers have been soaked in water first, so they’re less likely to burn during grilling. The köfte is ready and we’ll start grilling in a moment, but first, let’s get the Tzatziki ready as well. Add 150 grams of plain yogurt, then pour in a suitable amount of olive oil. Add some sumac powder. Remember to add a pinch of salt for seasoning. (Mix well) And that’s it — it’s ready. The grill next to us is already preheated. Let’s start grilling! Turkish barbecue is truly remarkable, and it has had a deep and lasting influence on the world. But this lamb köfte skewer is something we can make with ease — whether at home for a casual meal or outdoors on a camping trip, it’s easy to recreate. As the heart of successive empires, Turkey has long stood at the crossroads of cultural exchange and influence. From the shores of the Aegean to the deserts of West Asia, and from the plains of Eastern Europe to the coasts of North Africa. The culinary and spice culture of Turkey has long profoundly influenced the entire Mediterranean and Middle Eastern worlds. And it has branched out in different cultures. Keep turning the köfte until the surface is golden brown, then place them on flatbread and set aside. I suggest grilling some extra flatbread, along with tomatoes and green peppers as side dishes. The great thing about a small charcoal grill is that it’s compact yet delivers focused heat — and just like that, our grilling is done. Wrap the freshly grilled köfte meatballs directly in pita bread. Add the grilled tomatoes, fragrant, tender, and juicy. Make a small cut with a knife. Then top it with the freshly made, refreshing and delicious Tzatziki sauce. Sprinkle a little more sumac powder on top. Finally, garnish with some parsley leaves. Doesn’t that look amazing!?
