Spanakopita Mashed Potatoes

You need:
6 red potatoes
Water
5 or 6oz bag baby spinach
1/4 cup milk
2 tbsp butter
1-2 tsp black pepper
5-6 oz feta cheese

Hey, welcome to Jim’s Kitchen Kitchen. Time for another unique recipe. This time we’re going to try Spanacopa mashed potatoes. A very Greek influenced mashed potatoes. They sound exciting. I’ve chopped up a few red potatoes and brought them to a boil. Now I’m going to cover it and let those simmer for about 15 to 20 minutes to get them soft. In another large pan, I need to bring about a half an inch of water to a boil. To that, I’m going to add a bag of baby spinach. This one’s about 5 oz. to the pot. Cover it and boil it for 3 to 5 minutes until wilted. I’ve drained the potatoes. I’m going to add 1/4 cup of milk, a couple tablespoons of butter, some black pepper, and let’s mash that up. I’ve drained that spinach. And now I’m going to chop it up a bit. Add that to the potato as well as five or 6 oz of feta cheese. We’re just going to pour that on top and fold it in. Well, look at that. Spanicopa mashed potatoes. M. Mhm. Tasty potatoes. Do taste a bit of feta cheese. Loving the spinach in there. It’s very delicious. I know a while ago for Thanksgiving, I made spanacopa stuffing and it was amazing. And this is kind of similar. I’m going to give it a 7.1 out of 10. Did you hear about the guy that drank food coloring? He died a little inside.

  1. Love spanakopita! My Mom used to make chicken cutlets with mashed potatoes and spinach sauteed with garlic in olive oil. I always loved to mix the spinach and potatoes.
