Hey everybody, I’m super excited today because we are making some of the best salads for summer. And as it turns out, I just realized that we made all seafood salads. And so we have a a shrimp salad with a delicious dill dressing, a Caesar salad with a Caesar dressing, and a a salmon salad with creamy yogurt dressing. Now, these are the perfect representation of the Mediterranean diet because we have fresh vegetables, we have olive oil, and we have yogurt. Um, and we have fish. Uh, and fish is great because it’s a really good protein, but it’s also packed with omega-3 fatty acids. And so, these can be a meal on their own, or you could have it as a side dish. Personally, I would have any one of these as its own meal. So, let’s get cooking. and I hope you enjoy them. We’re going to start by prepping everything and grilling for all three salads first. So, to begin with, we’re going to use de veained raw shrimp without the shell and we’re going to add some lemon juice to it. Now, we just want to let that marinate for about half an hour. You don’t want to do more than that or else it will actually start to cook the shrimp just by using the lemon juice. Then we’re going to skewer the shrimp so they lay flat on the grill. And next, we’re going to cut up some red peppers and add olive oil and some salt and pepper and marinade that. And then to the salmon, we’re going to add some lemon juice and olive oil. Salt and pepper on both sides. And this is a nice filt of fish with the skin on it as well. But still, we’re going to add the olive oil, lemon juice, and salt and pepper to that side as well. Next, we’re going to take the romaine lettuce and cut them into halves. And then we’re going to just simply drizzle olive oil. And we can add a little bit of salt and pepper to this as well. But the olive oil is the most important part so that it’s going to char nicely and give it a nice crispy edge. And finally, we’re going to cut a loaf of bread into you can cut them into toast size pieces and then we can cut them afterwards just so that the if we cut them into croutons, they might actually fall into the grill and we don’t want that to happen. And next, uh, I learned this from cooking salmon another time where we, uh, didn’t put olive oil first on the grill and then all the salmon got stuck. You want to do this with the shrimp as well. And just making sure that there’s olive oil uh, on the grill so that it’s less likely to stick. Here we’re adding the shrimp and the salmon. And then we’re going to add the peppers. Now, this is a gas grill, and we’re going to have it on a mediumigh heat. We want it to to sear everything. Uh, but we don’t want it to cook too fast before, like the salmon can cook all the way through. It’s best to only turn the shrimp once. So, we want to cook each side of the shrimp for maybe one to two minutes. With the peppers, we want to turn them when they start to blacken. The shrimp are done. We’re going to add some more lemon juice to the top of the shrimp. And we’ll take off the peppers once they’re charred on both sides. And then we want to make sure that the salmon is cooked all the way through. And so one of the ways to do this is uh by closing the grill while you’re cooking it. I’m also adding some more olive oil here just again so it won’t it won’t stick and it’ll also give it a nice flame. And so the salmon is done and nice and flaky. Great. Next we’re going to add the romaine lettuce. And so with a Roma, you can start with the cut edge down. And then we’re also going to cook the bread along with it. And again, with the with the bread, there’s olive oil on it, which is going to make it nice and crispy on the outside and a little soft on the inside. We’re going to cook these pretty well until they’re nice and brown and crispy. [Music] Just like with the shrimp, we only want to try to turn the lettuce over once. And you can see it’s got a nice char to it. And so, uh, we’ll only need to cook it one or two minutes on that side. And then those will be done as well. Can see the bread looks amazing. And the romaine lettuce is done. So now we’re going to make the Caesar salad. And first we’re going to make the dressing. And this is a traditional Caesar salad dressing with anchovies and garlic that we chop up with and we add some salt to it. And it’s going to make a paste. And we chop. And then we kind of uh smear the knife back and forth and really turn it into a nice paste before we add it to a bowl to add the other ingredients. And here we’re adding mayonnaise, lemon juice, extra virgin olive oil, dijon mustard, and parmesan cheese. And then we’re also going to add some salt and pepper. And mix it up really nice. You can either mix it or whisk it, but the Parmesan cheese is what is actually going to make it thick. And this dressing is just fantastic. Next, we’re going to cut the croutons for the salad. And as I said, they should be crispy on the outside and just a little bit soft. And then we’ll top the romaine lettuce with the croutons with more Parmesan cheese and then drizzle the dressing on. And that is done. And this is just an incredibly tasty salad. The grilled romaine just makes this an out of thisorld salad. Next, we’re going to make grilled salmon with creamy yogurt dressing. So, we’re going to start with full fat Greek yogurt. And next, we’re going to add some Dijon mustard, freshlysqueezed lemon juice, extra virgin olive oil, fresh dill. We’re also adding some honey and salt and pepper. And we’ll mix this up. This This is uh a really nice summer dressing. Cooling, refreshing. We’re going to start with a few cups of whatever kind of uh lettuce that you like. We’re going to add to that sliced cucumbers, sliced radishes, and grated carrots. And then we’re going to take the grilled salmon and place that on top. Next, we’re going to drizzle on the creamy yogurt dressing. And we’re going to top it all off with pickled onions, which is going to give it a nice tang. This salad is just an incredible summer salad that I think you’re going to love. Next is the grilled shrimp salad. And for this, we’re going to start by making the dressing. And also we’re using olive oil, lemon juice, salt, pepper, fresh dill. And for this one, we’re just going to shake it up. Now, we’re going to put the salad together. Start with some sliced tomatoes. And then we’re going to put the grilled peppers on top. And then fresh, perfectly ripe avocado. I am using pickled onions again for this recipe. Finally, we’re going to take the shrimp skewers and put that on top of the salad. And then we’re going to drizzle on the delicious dill vinegrett dressing. And there you have it, another amazing summer grilled salad. So, there you have it. Three Mediterranean grilled salads.   1. I do my best to eat Mediterranean but I am allergic to fish and sea food so I know I definitely eat more chicken than is typical.

  2. thank you,,,all excellent salads,,,I loved them all… I have a new grille and I charred the romaine lettuce for the first time….the dressings are delicious,,,my son made the dressings while I cooked on the grille…and we had a party…..

  3. They all look good! It would be hard to choose. I guess you could add some grilled chicken to that Caesar salad.
