12 – 18 Thumb sized Prawns / Shrimps – Raw
1 cup of oil (peanut or sunflower)
1 egg
1 cup of cornstarch/cornflour
½ tea salt ½ tea pepper
For the sauce
½ cup sugar
1 cup of pineapple juice
1 tb cornstarch / cornflour
4 tb ketchup
2 tb soy sauce
3 tb rice vinegar
¼ tea red food colouring- optional
¼ red pepper
¼ green pepper
1 clove minced garlic
½ sliced onion

Chef Archie you have done it again. Just beautiful. Your mise en place is spot on. I really liked the way that you developed the sweet and sour sauce; so bright and brilliantly colored and textured. The final plating felt like Hong Kong. Well done my friend.
