Ingredients and how to make the Turkish lentil soup
Wash two cups of red lentils and soak it in cold water for 20 minutes
In a pot add a little bit of olive oil
and cook the onions until they caramelize
Then, add the following ingredients:
Carrots 1
Potatoes 1
Three cloves of garlic
Tomatoes 2
Add the lentil
Salt to taste and one tsp of paprika, and half a tsp each of black pepper and turmeric
Bay leaves
Cover with hot water
Cook the soup over medium heat for 30 minutes
Then remove the bay leaves
Blend the soup to a smooth consistency (You can also add dried mint to your soup if you like)
In a separate pan melt the butter with one tsp of paprika for 1 minutes.
Pour it over the soup when you serve it.
Lebeniye Soup is a creamy Turkish yogurt soup that has tiny meatballs and chickpeas and rice in it and finished with a super delicious butter mint sauce. This soup is traditional mostly in the east side of Turkey and welcomed at all meals: breakfast, lunch or dinner. It is very healthy with combination of meat, chickpeas and yogurt.
Ingredients For Lebeniyah Soup (5-8 Serving size)
1 medium onion
250gr. ground beef
1/2 tsp salt
1/2 tsp ground black pepper
3-4 tbsp olive oil or vegetable oil for frying the koftas
1/2 cup regular rice (type don’t matter much but starchy is better)
4 cups hot boiling water and more as needed for the thickness
salt to taste
1 cup plain yogurt
2 tbsp plain all purpose flour
1 egg
3/4 cup boiled chickpeas
For the mint butter sauce:
1 tbsp butter
1 tbsp mint
Instructions:
-In a pot add rice and water . Boil the rice until it is soft.
– Add chickpeas , salt and mix well .Cook for 5 minutes .
-In a chopper add onion , chop it well . Add mince meat , salt and pepper . Chop it well.
-Take small amount of mince mixture and make kofta (meatballs) . The size of meatballs should be same as the size of chickpea.
-In a pan add oil and fry the kofta .
– Add kofta to the soup and mix well.
-In a bowl add yogurt, flour , egg and 4 tbsp of soup mixture. Mix well until smooth.
-Add the yogurt mixture to the soup while stirring continuously
-Cook until the soup is bubbly.
-Prepare mint sauce by add butter to the same pan in which we cooked kofta .
-Add mint to the butter and saute for 10 – 15 seconds.
-Add mint sauce to the soup .Do not mix too much.
-Serve hot with bread.
