My take on the viral celery salad – with a few tweaks 🥒🌿

This salad originated on the menu at The Four Horsemen in Brooklyn and I’ve seen so many different versions of it!

As someone who can’t stand the texture of raw celery, I needed to see if it was as good as everyone claimed and I was SO surprised.

Ingredients

– 5 large stalks celery, very thinly sliced using a mandolin or sharp knife
– ⅓ cup almonds, roughly chopped
– ¼ cup red onion, diced (optionally soaked for 5-10 minutes to remove some of the sharp flavor)
– ½ cup cucumber, diced
– ¼ cup fresh parsley, finely chopped
– ⅓ cup dates, pitted chopped (about 6-8 Medjool dates)
– ½ cup Parmesan cheese, shaved

Dressing

– ¼ cup extra virgin olive oil
– 1 tbsp dijon mustard
– 1 ½ tsp honey
– Juice and zest of 1 medium lemon
– ¼ tsp each salt and freshly cracked black pepper, or more to taste

Add the chopped almonds to a small dry skillet and place over low heat
Toast for 8-10 minutes, tossing occasionally, until lightly browned and toasted
Chop the remaining ingredients; if you’re using a mandolin for the celery, be SUPER careful
For the dressing, combine all ingredients in a blender or bowl and blend or whisk until smooth
In a large bowl, toss together the celery, red onion, cucumber, parsley, dates, toasted almonds and shaved Parmesan
Pour over the dressing and toss to coat then serve

I did not think this celery salad was actually going to be good for me textures are just as important as flavors and I do not like the texture of raw Sal the original recipe uses walnuts but I’m using almonds roughly chop them then let them toast while you do the rest of the chopping add them to a dry Skillet over low heat for about 7 Minutes rinse the Red Onion if you want to make it milder the original recipe doesn’t include cucumber and parsley but I added some as well and the chop dates are a must now for the Celler wash it then I’m going to shave it super thick like this now everything into a bowl for the dressing extra virgin olive oil Dijon mustard honey pepper salt lemon juice throw in the zest too now Blend or whisk toss everything together with the toasted almonds and lots of shaved Parmesan and that’s it it’s so easy I’m still a little skeptical I really doubted this but it turned out so good that is way better than I expected this is the most I’ve ever enjoyed raw celery follow for more
