Planning to make riblets, about 1 to 1.5 in cubes.

Any tips on cooking times and temps?

Meat will cook with marination

    I would use cast iron half moon if you have it. Since the cook time will be a few minutes at most, you may want to use some wood chips (or very thin chunks) for a few minutes after you sear them to get some wood flavor (with closed top of course)

    Was thinking about aluminum boat and just slow BBQ (roast in sauce)

    About 300f for 1 hour?

    Thoughts?

    Can’t run a probe
