Crispy Eggplant Parmesan with Roasted Garlic Tomato Sauce
Ingredients
* 1 medium eggplant
* 6 fresh Roma tomatoes
* 1 whole garlic bulb
* Fresh basil leaves (small handful)
* 3 eggs, beaten with 4 tbsp milk
* 2 cups all-purpose flour
* 3 cups breadcrumbs (panko or Italian-style)
* 1 cup shredded mozzarella cheese
* ½ cup grated parmesan cheese
* 1 tsp dried oregano
* 1–2 tbsp balsamic vinegar
* ¼ cup olive oil (plus a drizzle for roasting garlic)
* Salt & pepper to taste
Make the Fresh Tomato Sauce
1. Dice tomatoes.
2. Add 1/4 cup oil
3. Add 1 whole garlic
4. Add tomatoes, salt, pepper, oregano
5. Bake at 350°F for 30 to 40 minutes.
Eggplant
1. Slice eggplant into ¼-inch rounds. Pat Dry
2. Bowl 1: Flour, seasoned with salt & pepper.
3. Bowl 2: Beaten eggs + 4 tbsp milk.
4. Bowl 3: Breadcrumbs mixed with a little parmesan.
5. Dredge each slice in flour → dip in egg/milk mixture → coat in breadcrumbs.
6. Fry until Golden brown 2 to 3 minutes each side.
Bake the Eggplant
1. Arrange slices on a baking sheet.
2. Spread a thin layer of tomato sauce in a baking dish.
3. Add a layer of eggplant.
4. Repeat layers, finishing with cheese on top.
5. Bake uncovered 20 minutes or until cheese bubbling and golden.
Hi everyone. Today we are making crispy eggplant parmesan with that Tik Tok viral baked tomato sauce, but we are keeping it totally on a budget and so crispy you can hear the crunch. Here are all the ingredients you will need and details will be in the description box below. I’m starting with cutting Roma tomatoes into quarters. We are using Roma instead of cherry because they’re so much cheaper and when they’re in season, they still give you great flavor. Place your tomatoes into a baking pan. Take a whole head of garlic. Slice off the top and place it right in the middle. Sprinkle half a teaspoon of salt and half a teaspoon of black pepper. Sprinkle half a teaspoon of oregano or as much as you like. And then cover the tomatoes with olive oil. Bake at 350 fah for about 40 minutes. Now moving on to the eggplant. I’m cutting them a little thinner than a/4 in. And I’m skipping the whole step of salting them, letting them sit and rinsing them off. They actually stay crispier this way and it saves us some time. Pat them dry on both sides as much as possible. Then get your assembly line ready. In one bowl I have flour. In another bowl, I have bread crumbs. You can use storebought or if you have leftover bread at home, just toast it and grind it up and add a pinch of salt and pepper. For the egg mixture, just whisk the egg with little milk. Now it’s time to fry. Dip each slice into the egg wash first, then into the flour mix. Coat them nicely. Drop them back into the egg wash and then into the breadrumbs. Make sure both sides are nicely coated before frying. Try to keep one hand for wet ingredient and one for dry. Now put them into the hot oil and make sure the oil temperature is around 350 fah so they fry up golden and crispy without soaking up too much oil. When you drop them into the oil, you want to hear the sizzling sound. Just like that. They will take about two to three minutes per side until they are golden and crispy. Place them on a plate with paper towels to catch the excess oil. Look how pretty they look. And they are crunchy. And look, our tomato sauce is ready just in time. Now, according to the viral video, the garlic should just slide right out of the peel. But here I am burning my hand, trying to squeeze them out, and rethinking my life choices. Once you’re done with the garlic, chop up some fresh basil. Fresh herbs are always best when you add them at the very end. Now, drizzle some balsamic vinegar. And if the tomatoes are in season and flavorful, you don’t even need to add any sugar. Look how pretty they look. And they smell even amazing. Now you can puree them with an immersion blender or in a regular blender. I have this baby casserole dish, but you can use a bigger one. To make the eggplant parmesan, cover the bottom with sauce. Add a layer of eggplant, then sauce, another layer of eggplant, and more sauce if you like. Then finish with mozzarella and parmesan cheese.
