    Fun fact, hanger can be classified as offal as it’s not part of any primal cut and is the diaphragm’s attachment to the spine. It’s located very close to the organs and has a more pronounced minerally livery flavor than other muscle. Delicious!

    Indeed, I *love* hanger steak! I just don’t love the prices, and that goes for almost all of my former go-to cheap cuts. But fr, that cut (hanger, onglet, hanging tender, etc) is one of the most satisfying! 😋🤌👏🤝
