Ingredients
2 lbs ground beef

1 white onion, finely chopped

1 cup uncooked rice

1 tsp salt

1 tsp black pepper

1 tsp chimichurri seasoning

1 tsp hot paprika

½ cup milk

6 oz thick tomato paste

1 cup room temperature water

Olive oil, for greasing the dish

Instructions
1. Prepare the Meat Mixture
In a large bowl, combine the ground beef, chopped onion, and uncooked rice.

Mix thoroughly, folding the rice into the meat until evenly distributed.

Add salt, pepper, chimichurri seasoning, and hot paprika. Mix again to evenly incorporate the spices.

Pour in the milk and knead by hand until the mixture is fully combined and has a moist texture.

2. Shape the Meatballs
Form large, round, and compact meatballs with your hands.

Continue shaping until all the meat mixture is used.

3. Prepare the Baking Dish
Drizzle olive oil on the bottom of a baking dish and spread it evenly with a brush.

Arrange the meatballs in the dish side-by-side, leaving a little space between them.

4. Make the Sauce
In a small bowl, mix the tomato paste with 1 cup of water until smooth and thick.

Pour the sauce over the meatballs, partially covering them (don’t submerge fully).

5. Bake
Preheat oven to 350°F (175°C).

Bake for 30 minutes, until meatballs are fully cooked and tender.

6. Serve
Remove from the oven and serve hot.

Optional: Serve with mashed potatoes or your favorite side dish.
