20-minute zucchini pasta has been a surprise hit in my house. Even my kiddos who don’t love zucchini like this sauce on their pasta. We’re going to start by mincing up some garlic and slicing your zucchini. You’re going to sauté it in a pan in olive oil or butter until the zucchini is soft and the garlic is golden brown. Watch that steam when you take that lid off. Prepare your pasta. Set aside some of the cooking water. Add some white beans and the zucchini and garlic to a blender and blend it up. You’re going to have that sauce which you can stir in or serve as a dip on the side. We love this with extra parmesan. It’s so yummy and it freezes beautifully for future meals.

    Used your recipe (plus addtions) tonight cause we had zucchini that needed using. We weren't working with kid palettes, so we added onion (cooked same time as the zuchinni), salt & pepper, red pepper flakes, and a little lemon juice. With the cheese sprinkled on top it was great!
