🌱 Ingredients for 2-3 portions:

– 100g of Quinoa
– 100g of Dried Green Lentils
– 2 Bay Leaves
– Allspice
– Whole peppercorns
– 1 Block of Halloumi Cheese
– 4 Mini Cucumbers
– 6 Radishes
– Chives
– Cashews
– 1 table spoon of Sun-dried Tomato Paste
– Nutritional Yest Flaks
– Sea Salt
– Maggi Liquid Seasoning
– Black Sesame Seeds

In today’s episode, we’re looking at my halumi and quinoa summer salad. It’s an ideal lunch or dinner on a hot summer day that doesn’t require too much work or time. It’s refreshing and filling yet not too heavy and doesn’t make you feel like you’re about to fall into a coma. First things first, we want to cook 100 g of dry green lentils in 300 ml of water. We season them with two bay leaves, some allspice, a few whole pepperc corns, and some sea salt. Let the lentils bubble away on medium heat for about 25 minutes until they soften and absorb the flavors of the herbs and spices. At the exact same time, we’ll be cooking 100 g of quinoa in 200 ml of water for around 20 minutes. Now, that gives us more than enough time to cap some fresh vegetables for a salad. We’ll be looking at six radishes, four mini cucumbers, and some chives. Once we strain our pulses and grains, we start combining everything in a large plastic bowl. We add 1 tbsp of sand-dried tomato paste, 1 tbsp of nutritional yeast flakes, some sea salt, and finally squeeze some lime juice. As the last piece of the puzzle, we’ll be frying some squeaky halumi cheese. We cut it into more or less even slices and fry it using a bit of extra virgin olive oil and a tiny bit of Maggi liquid seasoning for that extra saltiness and burst of umami if you’re a freak like me. Once the halumi is crispy brown on both sides, we chuck it onto a plate to cool down. And that gives us a few minutes to roast some cashews that we’re going to use for garnish. Now it’s time for the assembly. We make a nice little bed of spinach and cover it with our quinoa salad. Then we place our fried halumi slices on the edge of the bowl. Scatter some roasted cashews on top and sprinkle everything with black sesame seeds. And there you have it, my halumian quinoa summer salad.
