Hey Brady, I hope you’re enjoying you life. Looks like you’ve been bouncing around since being the HC of Michigan.
On a serious note, I **IMPLORE** you to check out that Chef Eric’s recipe on youtube of how to fast cook ribs. It felt like common sense. I also went from seasoning my ribs overnight to just an hour before the cook. The only thing I’d do differently than him is the saucing as he does like butter, honey, and something else if I recall. I instead do butter + the BBQ sauce that I want to use and damn that shit has turned out perfect the past few times. Last time was probably the “worst” to me as I somehow overcooked it BUT that extra 5-10 mins I guess I gave it lead to my kid actually loving it as it was that ultra “fall off the bone” style that melted when you ate it. Not mush, but also not any resistance from the bone. I think it could have been the BBQ sauce I used that time as it had a bit more vinegar in it that ma yahveh lead to it cooking even faster than anticipated.
9/10 recipe w/the obvious pivot needed at the saucing UNLESS you like to truly sauce at the end and not have it baked in.
