Lemon meringue pie is one of my favorite things on this planet, but I often do something ever so slightly wrong when making it and the lemon curd doesn't completely set. It's still delicious, but not pretty. It's a pretty big disappointment after juicing and zesting all those lemons and getting a full on workout whisking it as it thickens.
These actually set and look pretty in addition to tasting WONDERFUL!
